Japanese Cucumber

Japanese cucumbers are a favorite delicacy for its mild flavor, few seeds and long, slender fruit. Its flesh is rich in vitamin A, vitamin C, and folic acid, while the skin is fiber-rich with a range of minerals including magnesium, molybdenum, and potassium. Additionally, cucumber contains silica, a trace mineral that contributes greatly to strengthening our connective tissues.

Add in some rice vinegar, sea salt, toasted sesame seeds and a dash of sugar and you’re in for a low-calorie, low-carb , dairy-free and heart healthy salad.
